Moles Brewery - Wiltshire, England
The Moles Brewery was established in 1982 in Melksham, Wiltshire as one of a growing number of micro-breweries set up to meet the demand for traditional beers conditioned in a cask, widely known as ‘real ale’. Although many contemporaries have fallen by the wayside, the steady progress made by Moles Brewery has ensured that brewing in Melksham has remained a reality into the 21st century.
The brewing equipment has been built along traditional lines using a mash tun, copper, hop back and open fermenters to produce the 25 barrel all malt brew length. Brewing materials used include locally malted Maris Otter ale malt with a small amount of Crystal malt; choice Kent leaf hops of the Golding and Fuggles variety; and a traditional open fermenting ale yeast. The hopped wort is collected and fermented over 5 days before cooling and racking into 9 and 18 gallon casks.

At 5.8% abv Otter Head is the Brewery’s strongest beer – delivering an amazing rich flavour and aroma. Otter Head has a distinctive barley wine old ale character. It has a malt, fruit sweet flavour which gives way to a long bittersweet aftertaste. It has a well balanced aroma that reflects its taste and is deep red brown in colour.
Colour: A deep, luxurious red brown colour.
Aroma: It has a well balanced fruit and malt aroma.
Taste: It has a distinct barley wine, old ale character, yet is light to drink. It has a malt, fruit and slightly sweet flavour, with a long bittersweet aftertaste.
Otter Bright 4.3 %

In the past we brewed Otter Bright only in the summer. With the new dawn of interest in cask beer, it is perfectly positioned as a great beer for ‘new age drinkers’ who are discovering cask ale. It is so pale that it can easily be mistaken for lager and it delivers a great bitter citrus flavour with lots of fizz. A cool cellar temperature will
add to its refreshing qualities.
Colour: A very pale golden colour, with great condition.
Aroma: Bright has a strong and citrus fruit aroma.
Taste: It is a very refreshing beer with a fruity taste. The aftertaste is sweet with a subtle bitterness which is likely to leave you
wanting more.
Otter Bitter 3.6 %

Otter Bitter at 3.6 % ABV is a ‘session’ beer. It is a beautifully light and fruity beer with good hoppy bitterness. It leaves a refreshing bitterness which prompts the next gulp. A wonderful, old fashioned,‘session’ beer. Brewed for drinking with no frills.
Colour: Otter Bitter is a golden brown beer with a depth of colour that is reflected in its great condition.
Aroma: A strong and citrus fruit aroma.
Taste: Full of condition, Otter Bitter starts with a well balanced malt flavour with some bitterness. This is followed by a subtle bitterness that prompts the next gulp!
